What is your favourite time of the day? Love 5am – 6am when no-one else is awake and I can have a coffee watching the sun come up. It’s the quietest time of day.

What is your least favourite thing to do? Not being organised, when people are messy I can’t be around it.

Why coffee? It’s so diverse and personal. Growing up, my parents had a cafe and I started learning about origins and how you can manipulate a bean to taste different. Got passionate about it trying different coffees and realising that you can never stop learning with coffee. Barista’s are quite different and do things differently from each other. I love a sweet acidic coffee with milk because it cuts through the acid however another barista can make the same coffee in a totally different way.
What advice would you give? Ask questions!! I have worked with some amazing baristas and the only way you get better is by asking questions – nothing is stupid. Why do you do things the way you do them? Understand why and you won’t fail – you’ll smash it! I know a barista went from ok to pretty amazing after a 3 hour training session because he asked questions and understood why.
